How could I change settings made by easybcd from Linux

Do you mean you removed the option to boot Windows, or just changed the default ? Or perhaps you mean you've installed Linux and allowed it to take control of the boot ?
If the second, just override the default at boot-up and choose Windows, then from Windows use EasyBCD to set the default back to Windows.
If the first or last, then you'll need to use your Windows Installation DVD (or repair CD) to put the Windows bootmgr back in control.

You could always try (but no guarantees!) to copy the automatic backup of the BCD file that EasyBCD makes to the My Documents folder over the existing BCD file on the boot partition and hope that works?
