Windows 7 Driver Signature Enforcement

I've been told that to use my Zoom Skype adaptor with Windows 7 64 bit I have to disable the driver signature enforcement by pressing F8 each time I boot or find a program that will automate this. I read that EasyBCD would do this and I've been using that program to multiboot for some time. The box in EasyBCD>Advanced Options says 'Allow unsigned driver installation on Vista 64 Bit Edition.' Can I assume this also works for Windows 7 64 bit?

To some varying degree. Microsoft decided to be jerks (for the sake of security?) and broke it to some extent. First thing you should do really though is search for up to date software. If you can find a version that can be run on at least 64-bit Windows Vista it'll probably work in Windows 7 as well.
