So my USB wasn't showing up in boot menu to upgrade to Win11 from USB so I installed EasyBCD. Now i can only only a previous version of Windows 10 from 2019. How do I undo this? I'm in this older version which looks like what I used 5 years ago, but can't find how to get back into my current Win10 I've been using.

Installing EasyBCD will not affect your PC in any way (apart from occupying a small part of your disk space).
Using it to alter your boot parameters is another matter, it will do whatever you tell it to do.
What did you tell it to do ?

It sounds like EasyBCD may have altered your boot configuration. To fix it, try restarting your PC and accessing the boot menu (F12, F8, or ESC) to see if your current Windows 10 is listed. If not, open EasyBCD, go to Edit Boot Menu, and check if your latest Windows installation is there. If it's missing, add it under Add New Entry. If that doesn’t help, try running Startup Repair from a Windows 10 USB. You can also check Disk Management to see if your current Windows partition is visible and active.

To restore your main Windows 10 setup, restart your computer and enter the BIOS/UEFI settings (usually by pressing F2, F10, or Delete during boot). Ensure the boot order is set to your current Windows drive as the first boot device. If that doesn’t work, open msconfig in the older Windows version, go to the Boot tab, and set your main Windows 10 installation as the default boot option.
